Sponge Cake

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • A pinch of salt

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat the eggs and sugar together until the mixture becomes pale and fluffy. This may take about 5 minutes.
  3. Sift the flour, baking powder, and salt into the egg mixture. Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  4. Stir in the vanilla extract.
  5. Pour the cake batter into the greased plumpy moulds, filling them up to about two-thirds full.
  6. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the centre of the cakes comes out clean.
  7. Let the cakes cool in the moulds for a few minutes before serving them. The elegant designs of the Ecopack plumpy moulds let you serve in them directly!

Chocolate Cake

  • 115g dark chocolate
  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup all-purpose flour
  • A pinch of salt

  1. Preheat your oven to 425°F (220°C)
  2. In a microwave-safe bowl, melt the chocolate and butter together in 30-second intervals, stirring until smooth. Let it cool slightly.
  3. In a separate bowl, whisk together the sugar, eggs, and egg yolks until well combined. Gradually pour the melted chocolate mixture into the egg mixture, stirring until smooth. Sift in the flour and salt, and fold it into the chocolate mixture until just combined. Pour the batter into the greased plumpy moulds, filling them about three-quarters full.
  4. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centres are still slightly jiggly.
  5. Serve these delicious, gooey, chocolate cakes, in Ecopack’s beautiful plumpy moulds!

Plumpy Wheat Bread

  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 1/2 tsp salt
  • 2 tsp active dry yeast
  • 1 1/4 cups warm water
  • 1 tbsp honey or sugar
  •  2 tbsp olive oil

  1. In a small bowl, mix the warm water and honey (or sugar). Sprinkle the yeast over the mixture and let it sit for about 5-10 minutes, or until it becomes frothy.
  2. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, and salt.
  3. Pour the yeast mixture and olive oil into the dry ingredients. Mix until the dough comes together.
  4. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it has doubled in size.
  6. Preheat your oven to 375°F (190°C).
  7. Punch down the dough and divide it into portions to fit your plumpy moulds. Place the dough portions into the moulds and let them rise for an additional 15-20 minutes.
  8.  Bake the bread in the preheated oven for 20-25 minutes, or until the bread sounds hollow when tapped on the bottom.
